Easy cookies for a busy mom

Who has time to be in the kitchen for 2 hours and make cookies?  I sure don't!  I love to bake for my kids, instead of buying store bought cookies as often as I can, and I have finally figured out how to do this in 30 minutes and make enough cookies for the week.

Tell me, tell me!  What is the secret?

Are you ready for this? 

First, here is my favorite chocolate chip cookie recipe:

Pre-heat oven to 375*

1 cup of softened butter
1 cup of packed brown sugar
1/2 cup granulated sugar (white)

Mix together.

Add 2 eggs and 1.5 tsp of vailla extract.

Mix again.

Stir in 2 cups of all-purpose flour
1 tsp of baking soda
1/2 tsp of salt

Finally, stir in 2 cups of pure semi-sweet chocolate chips (I prefer Hersey's Chipits)

Usually, recipes tell you to put 1 tbsp. dollops on pan and bake for yadayadayada...

My version is quicker!!

I take all the cookie dough and spread it evenly in a ungreased cookie sheet (jelly roll pan) and cook for 20 minutes (or until golden brown).

YUM!!!

Here is the final product.  As I said, 30 minutes is all it took.  Time to mix the batter and heat the over, 20+ minutes to bake and voila!  A whole pan of cookies.
 
I cut the whole pan up into little squares and store in an air-tight container for the week.
 
I have also made these pink for my daughter with the help of food colouring.  There are so many options with this recipe.
