We had a water fight with the kids in the backyard, had a lovely supper (I will share the recipe), ate cake and sang Happy Birthday, and listened to some guitar playing by my brother. What a great day.
We decided to make tacos for dinner, but we like to put a swing on things. Unfortunately, this was not kid friendly and had to make them Kraft dinner, Pogo's and fresh peaches. Everyone was happy.

We like the new Mild Old El Paso for our taco nights, but instead of ground beef, we use ground chicken. Yum!
My mom made a yummy avocado salsa to add to the tacos. Here is the recipe:
1 avocado, sliced and diced
1 cup of frozen corn
10 cherry tomatoes, sliced
1 lime, juiced
salt and pepper to taste
Mix all together and let sit for at least 20 minutes. With the mild taco kit, you get a sour cream mixture that mixes well with the avocado salsa. We also bought soft shells for those that like them better.
You have your chicken taco simmering, cheese shredded, avocado salsa ready and sour cream mixture ready. Let's make tacos!
